Sugar free mini cherry cheesecakes

Ingredients
100 reduced fat vanilla wafers13 (8 oz.) pkgs fat free cream cheese3 cups egg beaters3 cups splenda3 tsp. vanilla extract2 cans sugar free cherry pie filling (for topping)
Directions
Preheat oven to 350 degrees. Line muffin tins with foil cupcake papers. Place 1 vanilla wafer in bottom of each cupcake paper. In large mixing bowl, beat cream cheese til smooth. Add Splenda and vanilla, mix thoroughly. Add Egg Beaters and beat til smooth and creamy. Pour batter into muffin tins and bake for 20-25 minutes or til centers are almost set. Refrigerate 2 hours or overnight. Top with a teaspoon of sugar free cherry pie filling before serving.
