Spinach Gratin (as modified from Vegetarian Cooking for Everyone)

Ingredients
1 medium onion, diced1 pound fresh spinach1 TBSP olive oil1 clove garlicHerbs, salt, pepper5 eggs2 cups Cottage Cheese (lowfat)
Directions
Preheat oven to 350
Heat the oil and saute the onion until translucent. Add garlic, spices, and S&P
To same pan, add spinach and wilt. Drain liquid.
Combine eggs, cottage cheese, and spinach mixture and pour into a lightly oiled 9x13 pan.
Cook until firm, about 35-40 minutes

Serving Size: Makes 4 hearty portions as main dish or 6-8 as a side
