Orange Chia Seed Gluten Free Muffins

3 eggs ( room temp)1/4 cup coconut flour1/4 cup vegetable oil1/4 cup honey1/4 tsp sea salt (fine)1/4 tsp baking soda1 Tbsp orange (or lemon) zest1 Tbsp chia seeds
Preheat the oven to 350 F and line a muffin tin with muffin cups. Mix the together everything except the orange zest and chia seeds until well blended. Add chia seeds and zest at the end. Bake for 20 to 25 minutes for normal size muffins and 15 to 18 for mini muffins.
