Ginger-Lime Tropical Fruit Salad (vegan)

Ingredients
FRUIT:1 pineapple, cubed (5/8 to 1-inch pieces)1/2 papaya, cubed (same)1 mango, cubed to the best of your ability2 kiwis, cut into 1/2-inch-thick quarter-rounds2 bananas, sliced (at least 1/2-inch thick)DRESSING:zest and juice of 1 lime3 T agave syrup1 t fresh ginger, minced or grated (may sub with 1/2 t dried ground ginger)pinch of salt (not joking)OPTIONAL GARNISH:flaked coconutchopped macadamia nuts
Directions
Combine fruit in a bowl, the bigger the better.

Scrub, dry, and zest the lime into a small bowl or glass. Roll and juice it, picking out any seeds. Add agave, ginger, and salt, and mix with a fork or whisk until agave is incorporated.

Pour over fruit and stir gently to coat evenly. Refrigerate at least 30 minutes, tossing occasionally to redistribute dressing. The longer it sits, the more harmonious the flavors become.

To serve, top with a little coconut and macadamia -- completely optional, but it makes for a nice presentation and provides an interesting textural contrast.

Serving Size: 8 as a side, 6 as a generous dessert, or 4 if you are batty for fruit
