1 cup pearl barley1 cup brown lentils1 medium onion, diced1 quart vegetable stock, or your favorite homemade stock1/2 cup dried mushrooms (porcini or wild mushrooms)1 cup water3 Tbsp tomato paste2 tsp thyme leafKosher salt and fresh ground black pepper8 oz cremini mushrooms, dirt brushed off, stems removed, quartered5 oz baby spinach leaves
Cook in rice cooker (slow cooker setting) for about two-three hours, or until all the liquid is absorbed.
