One Minute Bread

Ingredients
2 tsp. butter or other oil1 large egg1 Tbsp water1/2 Tbsp parmesan cheese1 1/2 Tbsp Coconut Flour (or Almond meal or Atkins baking mix)1 Tbsp Flax meal1/3 tsp baking powderdash salt1/4 tsp Splenda
Directions
In standard cereal bowl or smaller bowl for english muffin size. microwave butter 20 sec. to melt. Add water (can use milk or other liquid) and egg. Beat together then add the rest of the ingredients in order. Stir with fork until well combined. keep in same bowl or spread in square container. microwave for 1 1/2 minute or until set. invert and cool slightly before slicing for toast or sandwich bread.

    Tried this tonight and it tasted great! Only issue was that it didn't make a very thick slice so it fell apart when I sliced it. Will use a smaller container next time. - 4/2/13
