Hawaiian Chicken Salad

3 Chicken breasts - no skin, no bone3 cups halved red grapes1 16 oz can of crushed pineapple - 90% drained3 TBSP chopped walnuts3 TBSP light mayo1 can frozen apple juice for cooking in (this is not calculated in the nutritional information as it is used for cooking and most of it cooks off or isn't used).
Poach chicken breasts for 5 minutes in apple juice. (You may need to add a little water to cover the breasts depending on size of pan and chicken). Remove breasts and keep juice at a boil until it starts to caramelize. Place breasts back in pan for 3-5 minutes. Remove chicken to cool. Cut the grapes in half and put into a bowl. Set aside. When chicken is cool, cut up into cubes and place in bowl with grapes. Gently mix. Add can of crushed pineapple with just a little bit of juice for wetness. Toss again. Add mayo and mix it in. Add walnuts and mix in. Chill and serve!!
