4 (1/8 in) slices unpeeled ginger2 C sliced onion5 C low salt beef broth2 T Sugar2 T Fish sauce5 Whole star anise3 Cloves4 C Water2 C Rice noodles4 oz flank steak1 C Bean sprouts1/2 C vertically sliced onion1/2 C green onion, chopped12 Basil leaves4 Lime wedgeschopped, seeded serranos (optional)
1. Saute ginger and 2 C onion about 4 min.
2. Combine next 5 ingredients in saucepan. Bring to boil & simmer for 30 mins. Strain to bowl. Discard solids and return broth to pan.
3. Cook steak 4 min on each side on medium high heat. Cut diagonally.
4. Bring broth to a boil. Add rice noodles and beef. Garnish with sprouts, green onions, basil, onions etc.
