Ingredients
Directions
2 cups of ground DRY (in a food processor preferably) oats (I used instant "quick 1-minute oats)1 egg2/3 cup (I used Vanilla) soymilk4 Zero-calorie sweetener packets (if desired. This gives the cake a slightly sweeter edge, you could totally use a bit of salt in place of this as well)Non-stick cooking/baking spray (0-calories, and super easy to clean up)And Just a tad bit of flour for your hands, seeing as the dough can be sticky.
(1.) Take all the liquid (Milk/egg) ingredients and mix them together thoroughly.
(2.) Do the same for the dry (Oatmeal sugar/salt)
(3.) Slowly pour in the liquid mixture to the dry, mixing/folding in the oatmeal/sugar/salt mixture as you go along. The mixture may clump, this is natural. Simply continue mixing and if the mixture seems a little dry for your tastes, feel free to add a bit more of soymilk in to your liking.
(4.) After dough is thoroughly combined (It will be sticky! Not to worry, though! Just use a bit of flour on your hands if you're not afraid to get a little dirty.) divide dough into ten small balls and place on a sprayed/Pam-ed cookie sheet.
(5.) Preheat your oven to 350 degrees and bake for about 20 minutes.
Serving Size: Recipe makes TEN small ball-shaped servings roughly divided.
