Healthy Mediterranean Stir Fry (Ghallaba)

Carrots- 1/4 cup slicedMulti colored sweet peppers- 1/4 cupMushrooms- 1/2 cupOlive oil- 1 tspTomato sauce- 4 tbspWater- 1/2 cupPaprika-1 tspCayenne pepper- 1/2 tspMinced garlic- 1 tbspParsley- 1 tspChopped onion- 1 tspSalt- 1 tspBlack pepper- 1/2 tsp
In a wok or large pot on medium heat, add olive oil and chopped onion, next add mushrooms and salt, stir and let cook for 5 minutes until mushrooms are wilted. Next add the carrots and peppers, stir and cook for another 5 minutes.. Next add garlic and stir, cook for 5 minutes. Stir in the tomato sauce and water, stir, then add cayenne pepper, paprika and black pepper, and let simmer for about 10 minutes.
Plate and serve.
This would go great with a 1/2 cup of brown rice as a side.
