Chicken and Penne with Tomato Pesto

Ingredients
1-1/2 cups high fiber penne2 Tbsp olive oil1/2 large onion, chopped1/2 cup carrot, chopped1 large bell pepper, chopped1 chicken breast1/4 cup sundried tomato pestoSalt to tastePepper to taste
Directions
Cook pasta as directed.
Cook chicken breast in 1 Tbsp olive oil until done. Set aside to rest.
Cook onion and carrots in other 1 Tbsp olive oil for a few minutes, then add bell pepper and finish cooking. Remove from heat.
Dice cooked chicken. Add drained and rinsed pasta, chicken and tomato pesto to veggie mix.
Add salt and pepper to taste.
Grate a little Asiago onto each serving.
