Salade Nicoise

Ingredients
1 pound fresh or frozen green beans12 oz red potatoes12 black olives, halved2 T capers, drained3 thin slices of red onion, separated1 T olive oil2 T lemon juice1 T dijon mustardgenerous amount of freshly ground black pepperSalt to taste4 hard boiled eggs4 tomatoes
Directions
Steam green beans and potatoes until done.
Mix the olive oil, lemon juice, cracked pepper and mustard together. Pour over beans and potatoes.
Add in the olives, capers and onions. Toss gently.
When serving, plate the salad, adding one hard boiled egg, quartered, atop salad and one tomato, sliced, alongside.
