Oyako Domburi

Ingredients
1/2 lb. bonelss skinless chicken 1 tbsp. oil1/2 c. chopped mushrooms1 c. water1/4 c. sugar1/3 c. soy sauce2 scallions, chopped2c. fresh spinach5 eggs
Directions
Cut chicken in cubes and brown in oil with mushrooms. Mix water, soy sauce, and sugar, pour over chicken mixture. Simmer 15 minutes. Add scallions and spinach. Simmer for one minute. While spinach is still bright green, add beaten egg to skillet and cover. Cook briefly, just until set. Ladle over individual rice servings in bowls.

    I've never made oyako domburi with spinach or mushrooms. They are a great addition. I doubled the recipe and used only 1/4 cup sugar and it is still good. - 3/10/09
