Poached Halibut

Ingredients
8 oz. Halibut (cheesecloth to wrap halibut)1 cup water juice of 1/2 medium lemon1/4 cup onion2 sprigs fresh parsley1/2 tsp. salt6 whole peppercorns1 bay leaf(extra boiling water)
Directions
Combine all ingredients except halibut and simmer 30 minutes. Wrap halibut in cheesecloth.Carefully place halibut in poaching liquid to cover. If necessary, add boiling water. Cover and simmer allowing 10 minutes per inch of thickness measured at the thickest point, or until halibut flakes easily when tested with fork at thickest part. Remove from poaching liquid. Serve hot or cold.

    Thank you, Antiochia, for telling me about this recipe! It's great! I didn't bother with the cheesecloth, though. I kept the poaching liquid at barely a simmer, and the fish turned out beautifully! - 6/25/12
