Fatoush with turkey

Ingredients
1/2 lb turkey breast, sliced1 cucumber, diced2 tomatoes, diced1/2 cup red onion, sliced thin2 pita rounds, toasted3 tbsp balsamic vinegar2 tbsp olive oil2 tsp ground cumin*3 tbsp fresh mint, chopped**ingredients not included in nutritional information
Directions
Spray a pan with cooking spray. Cut turkey breast into thin slices and quickly stir fry. Set aside.

Toast pita rounds (I found it easier to cut into quarters then toast) then slice into thin strips.

In a bowl, combine onion, cucumber, tomato, oil, vinegar, mint, cumin and toss. Add turkey and pita, salt and pepper to taste, then toss again.
