Quick Blender Buckwheat Oat Pancakes

1 c. rolled oats, uncooked1/2 c. buckwheat flour1/4 tsp. salt1 1/2 tsp. baking powder1 1/4 c. milk 1 Tbsp. oil1 Tbsp. honey
place oats in blender and grind into a coarse flour( I "flake" mine first with my flaker and grind buckwheat for the flour...you can buy yours already ground as flour if you like). Add remaining ingredients and blend well. Let batter sit for 2-4 minutes to thicken. Blend again for 30 seconds. Pour onto hot, greased griddle. Cook until bubbles form on top and flip over to brown. (You can double the recipe and keep leftover batter in the fridge. The batter will thicken, so you can add a little water.
