Crustless Goat Cheese and Caramelized Onion Quiche

4 large eggs1/2 cup 1% milk2 oz soft goat cheese, crumbled1 cup grape tomatoes, cut in half1 medium onion2 Tbsp olive oil1 Tbsp balsamic vinegarsalt & pepper to taste (not included in nutrition info)
Heat olive oil inn a heavy frying pan over medium to medium-high heat. Add onions and saute until golden brown. Splash in balsamic vinegar and stir to coat onions. Transfer caramelized onions to a lightly greased pie plate.
Sprinkle onions with goat cheese.
Whisk together eggs, milk, salt, & pepper. Pour mixture over other ingredients in pie pan. Top with tomatoes
Cook in 350 degree oven for 45 minutes, or until a knife inserted in the middle comes out clean.
