WET:Ener-G vegan egg replacer equivalent 2 eggs2 c orange juice1/2 c unsweetened applesauce2 t freshly grated orange rind1 c splenda brown blend1/4 c lecithin12oz fresh or frozen cranberriesDRY:4 c total of white whole wheat flour, soy flour, pulverized oatmeal, oat bran, wheat germ1/2 c freshly ground flax seed2 T baking powder1/2 t salt1/2 t cardamomTOPPING:8 t turbinado sugar
Combine wet in one bowl.
Combine dry in separate bowl.
Mix together.
Spoon into mini muffin tins which have been sprayed with Pam. Sprinkle with turbinado sugar.
Bake 375 for 18-20 minutes for mini muffins (22 minutes regular size muffins).
Serving Size: Makes 78 mini muffins.
