Salmon Salad Lettuce Wraps

Ingredients
2 cans (7.5 oz each) salmon1/3 cup light mayo (I use the olive oil version)1 tbsp lemon juice (or 2 lemon wedges, squeezed) 2 tsp Dijon mustard (or other of your choice)1/4 cup finely diced celery1/4 cup finely diced onion1/4 cup pickle relish, drained (I taste as I go and only add relish to my liking)Dash of black pepper
Directions
Mix all ingredients together.

Add cucumber slices and tomato, if desired and serve on lettuce leaves.
