Vegan Sweet Corn Bread

1 1/2 Cups Whole Wheat Flour or Whole Wheat Pastry Flour2/3 Cup Sugar1/2 Cup corn meal1 Tablespoon baking powder1/2 teaspoon salt1 1/4 Cup light soy milk1/3 cup canola oil2 Tablespoons Ground Flaxseed mixed with 6 Tbsps water3 Tablespoons Light Smart Balance Margarine melted
1. Preheat oven to 350 F. Grease 8 inch square pan
or loaf pan.
2. Mix the 2 Tbsp ground flaxseed with 6 Tbsps of water in a bowl and let it stand while you mix the rest of the ingredients. This substitutes the eggs.
3. Combine flour, sugar, corn meal, baking powder and salt in medium bowl. Combine soymilk, flaxseed mixture, oil and melted butter in small bowl, mix well. Add to flour mixture and stir just until blended.
4. Pour into baking pan. Bake for 35 minutes or until wooded pick comes out clean, if using loaf pan might need to increase to 45 min.
Serving Size: Makes 16 2 inch squares
