Hint of Chocolate Pumpkin Protein Muffins

1 cup oat bran3/4 tsp baking powder1/2 tsp pumpkin pie spice1 tbsp cinnamon3/4 c truvia3/4 c pure pumpkin1 tbsp sugar-free chocolate fat free pudding mix1/3 cup fat free Greek yogurt1 scoop chocolate protein powder (I use Plant Fusion)4 tsp powdered egg whites + 1/4 cup sugar free chocolate syrup such as Torani or Davinci
Preheat oven to 350F and line a 12-cup muffin pan with baking cups (**NOTE: use aluminum baking cups for the best possible result here, or else some muffin will get stuck to the liner!) and spray with nonstick spray.
In a large bowl combine oat bran, baking powder, spices, sweetener, pudding mix and protein powder. In a small bowl combine pumpkin, egg whites and chocolate syrup, and greek yogurt.
Mix wet into dry and stir until a batter forms and everything is wet.
Scoop into muffin cups and bake for 30-45 minutes or until a toothpick comes out clean and the *bottom* of the muffins is relatively firm (you'll have to put on your baking gloves and check!)
