Mike's Pasta Sauce

1 6 oz cans of tomato paste1 27 oz can of diced tomatoes2 15 oz can of Tomato Sauce1 onion finely chopped1 carrot grated5-6 cloves of garlic1/4 cup of Olive oil1 7 oz bottle of green olives with the liquid2 tbsp basil2 tbsp oregano1 tsp of marjoram2 tbsp of thyme dried pequin chile16 oz of 93% lean ground turkey
I like to use a slow cooker for this.
I also use a small onion chopper to chop the onion into very small pieces.
Grate the carrot(s) so that it cooks up into the sauce.
Brown the ground turkey in a skillet. Sprinkle with the cayenne pepper while browning.
Then add all the ingredients to the slow cooker and cook at med to high for 1-2 hours, then at low for 3-4 hours.
Many people add some sugar while making pasta sauce, but allowing it to cook for several hours eliminates the need. Also the grated carrot performs the same function as the sugar, but is healthier.
Serving Size: makes 12 servings of 1 cup each
