Chia Muffins

Ingredients
1 tbs. ground chia seeds1.5 cups whole wheat flour2 tsp baking soda.5 tsp salt1 cup unsweetened apple sauce1 cup sweet potato puree2 egg whites.5 cup agave syrup2 tsp lemon juice1 tsp lemon zest .5 cup dried cranberries1 tbsp vanilla extract (optional)
Directions
Mix together wet ingredients. In a separate bowl mix dry ingredients. Fold wet ingredients into dry ingredients. Scoop into muffin tins and bake for 15-20 minutes at 350 degrees F.
