Green Eggs & Ricotta

Ingredients
One Large Egg + One Egg White3-4 Small Leaves of Fresh Spinach1 tbsp of Ricotta Cheese, Part SkimDash of :Chia SeedsSpirulinaSalt + Pepper
Directions
Scramble one whole egg with one egg white.
Tear up a few small leaves of spinach and add to eggs.
Add the chia seeds, and spirulina, and a pinch of salt & pepper. Give everything a little stir.

Spray small frypan with olive oil spray and place on low to medium heat.
Pour in mixture, then place small dollops of ricotta cheese throughout.
Cook first side for about 2 minutes, flip and cook an additional 1 minute.
Flip frypan over to plate.
Salt & pepper to taste, if desired.
