Summer Squash/Zucchini Casserole

Ingredients
2 zucchini, sliced2 yellow squash, sliced1 c. sweet red pepper1 onion, sliced2 cloves garlic1/4 t. cayenne or chipotle pepper1 t. oil1 c. mushrooms1/2 grated parmesean cheese1/2 grated mozzarella cheese
Directions
cook onion, mushrooms, and pepper in oil until tender. Add garlic and cook 1 minute more. Set aside. In baking dish, take half of the squash and zucchini and make a layer. Top with half the onion mixture. Repeat. Top all with cheeses and bake at 350-400 for about 30 minutes or until mozzarella begins to brown.
