Chickpea and White Bean Salad

Ingredients
1 can chickpeas (rinsed and drained)1 can white beans (rinsed and drained)1/2 large yellow bell pepper, diced1/2 large orange bell pepper, diced1/2 large red onion, diced1 cup (or more) cherry tomatoes, quartered1 cup fresh spinach, chopped into strips1.5 oz parmesan or peccorino ramano, grated
Directions
Mix all ingredients in a large bowl. Makes Six 1 cup servings with a little extra. Serve as a a salad, in a wrap, on a sandwich, etc. Works well warm, cold, or room temp.
