Low Carb Gluten Free Coconut Flour Waffles

Ingredients
2 eggs1/3 cup 1% milk2 T. extra virgin olive oil1/4 cup sugar free pancake syrup, or sugar free vanilla coffee syrup1 t. vanilla extract1/4 cup coconut flour1/4 cup flaxseed meal1 1/2 t. baking powder1/2 t. salt
Directions
Preheat a waffle iron as directed.

Mix eggs, milk, olive oil, pancake or coffee syrup, and vanilla extract in a medium bowl using a wire whisk. Beat until the mixture is thickened and creamy. Add coconut flour, flaxseed meal, baking powder and salt. Let set for several minutes as the mixture will thicken.

Spray the waffle iron with non stick cooking spray and cook waffles according to the waffle iron directions using 1/4 cup-1/3 cup per waffle.

This also makes excellent pancakes.

    These are awesome. I did get 5 four inch waffles out of my batter. I also used unsweetened coconut milk instead of the 1% milk you used. It lowered the carbs a bit. Thanks for an awesome recipe I can have on my low carb diet. - 3/1/15

    Tasty, tasty, tasty! I wanted sweet this AM & this hit the spot! Used the SF maple syrup option & could probably make a low carb McGriddle breakfast sandwich. Topped with berries! Yum! - 4/30/19
