Baked Oatmeal To Go

Ingredients
2 eggs1 tsp vanilla2 c applesauce, unsweeted1 banana, mashed6 packets stevia5 cups old fashioned oatmeal1/4 c flaxseed meal1 Tbsp cinnamon1 Tbsp baking powder1 tsp salt2 3/4 c milkOptional toppings: raisins, pecans, walnuts, chocolate chips (not included in recipe calorie calculations)
Directions
1. Preheat oven to 350 degrees.
2. Mix eggs, vanilla, applesauce, banana and stevia.
3. Add oats, flaxseed meal, cinnamon, baking powder, salt and mix well.
4. Pour in milk and stir.
5. Spray 24 muffin cups or use cupcake papers. Pounr mixture evenly into muffin tin cups.
6. Add toppings if desired.
7. Bake for 30 minutes or until toothpick in center comes out clean.
8. Cool and enjoy. Freeze well.
