Roasted Sweet Pepper & Chickpea Dip

Ingredients
1 1/2 Sweet bell peppers1-15 oz can chickpeas, drained & rinsed3 Tbsp olive oil1 clove garlic1 tsp red wine vinegarSalt & pepper
Directions
Heat oven to 400 degrees. Toss peppers with 1 Tbsp of olive oil, salt & pepper. Roast until tender, about 18 minutes. Let cool. Mix all ingredients in a food processor until combined. Serve with veggies, crackers, bread or whatever you like to dip.
