Ingredients
3 C. Chopped Fresh Apricot1 C. Shallots, Julienned1/2 C. Chopped Green Bell Pepper1/2 C. Chopped Red Bell Pepper1/2 C. Chopped Fresh Pineapple1/4 C. Chopped Cherry Tomatoes1 Habanero Pepper, Seeded & Minced2 Cloves Garlic, Minced1 tsp. Minced Fresh Cilantro1/2 tsp. Cumin1/4 C. Fresh Lime Juice
Directions
Mix the apricots, shallots, green bell pepper, red bell pepper, pineapple, cherry tomatoes, habanero pepper, garlic, cilantro, cumin, & lime juice together in a bowl; refrigerate at least 2 hrs before serving.
