Chicken Soup (no starch)

Ingredients
Ingredients:Chicken Breast, no skin, 5 ounces Mushrooms, fresh, 1 cup, pieces or slicesCelery, raw, 2 stalk, medium Baby Carrots, raw, 8 largeOnions, raw, 1 smallWater, tap, 6 cup*Bullion, Chicken Flavored, 6 serving, optional, add to taste (I use Maggi brand powdered as it is lactose-free and I can use it to taste)garlic 1 clove minced (optional)parsley dried 1 tbspsea salt (optional)black pepper (optional)
Directions
If your chicken is raw, you will need to boil it until it is done in other water first. If it is cooked, you don't have to do that. I do not use my boiling water for the soup becuase it has a chicken film on top.

Chop celery, onion, and baby carrots to desired size (for kids - you can mince them and skip the mushrooms; for adults I leave everything more chuncky). In a medium to large soup pot combine all ingredients. Bring to a boil and simmer until carrot and celery are soft.

Divide into 6 servings. Serve hot. Top with a cooked grain or bean (noodle, lentile, couscous, rice, etc) if desired (not in nutritional information).
