Zucchini Boat

2 large zucchini3 Artichoke hearts (in water not oil)1 cup diced cherry tomatoes1 small banana pepper1 small felicity pepper (mild jalapeno)1 Tbsp fresh basil1 Tbsp fresh oregano1 Tsp fresh sage1 Tbsp Minced garlic2 oz guda cheese
- Slice the zucchini long ways in half. Scoop out the seeds making a hallow like a canoe.
- Dice tomatoes, artichokes, and peppers. finely chop all herbs, mince the garlic.
- Slice the cheese in thin slices the width of the hallow.
- mixe artichoke, tomato, pepper, herbs and garlic in a bowl.
- Fill zucchini boats with the mixture.
- Top with guda cheese.
Bake at 350 for 35 min or until zucchini is tender.
