Impromptu Fried Rice

Ingredients
1 cup leftover brown rice1 medium carrot, peeled and chopped1 slice red onion, chopped2 green onions, chopped2 tsp toasted sesame seeds1 tbsp canola oil1 tbsp reduced sodium soy sauce2 tbsp chopped green pepper1 egg, beaten with small pinch salt
Directions
Add oil to small fry pan, heat up. Add in the green pepper, red onion, and carrot and saute for a minute. Crumble in the rice (leftover and refrigerated rice separates better than freshly cooked) and saute for a minute or 2. Put in the soy sauce and stir until combined. Make a hollow in the middle of the rice and pour in beaten egg mixture and let sit for a minute. Stir eggs so they are mostly cooked. Toss in green onions and sesame seeds until the egg bits take on a dry appearance.
