Marinated Veggies

Ingredients
1/4 cup olive oil1/2 cup red wine vinegar1 tbsp dijon mustard1 tbsp (or 3 cloves) garlic, minced3/4 tsp salt (or to taste)1/2 tsp sugar (or omit)1/2 tsp ground black pepper1 tbsp italian seasoning______________________________1 and 1/2 cups broccoli florets1 and 1/2 cups cauliflower florets3 carrots, peeled and chopped2 zucchini (medium size) chopped1 pint container cherry tomatoes or grape tomatoes1 cup cherry peppers, halved and seeded (or use 12)1 small red onion, thinly sliced
Directions
Whisk together first set of ingredients in a small bowl. Put veggies in a large tupperware container. Pour the dressing over the veggies. Toss, then refrigerate. Toss veggies every so often. Wait at least 2 hours to eat this, tastes even better the next day. Top with grated parmesan cheese if desired, but remember to count those calories too!
