Ingredients
10 Fresh Large Eggs (whites only)1 Cup Spinach (shredded)1 Stalk Broccoli (dice the top only)1 Cup Green Onion5 Cherry Tomatoes Sliced thin3 TBSP Bell Pepper (diced)
Directions
Coat non-stick skillet with cooking spray over med-high heat. Add all of the vegetables. Cook for approx. 8 minutes, stirring to cook all the vegetables evenly. Remove vegetables and seat aside. Wipe skillet .. re-oil and add the egg whites. Once you have stirred the whites once add the vegetables in. Cook till eggs are done.
