Breakfast potatos with sausage, eggs, and cheese

1 pkg Jimmy Dean fully Cooked Turkey sausage links10 eggs 2 tbsp milk 4 medium potatoes1 whole white onion2 tsp minced garlic2 tbsp olive oil1/2 cup colby jack cheese
Cut potatoes into bite size pieces. Dice white onion. Cut each sausage link into 8-10 pieces. Crack all eggs into a medium mixing bowl, add 2 tbsp milk and wisk together until yolks are broken and well blended. In a meduim skillet heat 1 tbsp olive oil, add sausage and cook until well browned - set aside. In a second medium skillet, heat 1 tbsp olive oil - add potatoes and white onion, cover with a lid, stir often, cook until tender and browned. When potatoes are almost done - put sausage back on the burner and heat, add egg mixture and cook until done. Add eggs and sausage to the potatoes, mix, cover with cheese, remove from heat, cover with lid and let stand until cheese is melted. Serve while hot.
