4 Eggs separated3 TBS Butter melted (can sub with applesauce or oil to be Milk free)1 Tsp Sugar1 Cup Rice Four1/2 tsp Salt1+Cup Coconut Milk
Separate the eggs. Put the whites in a bowl and beat on high until stiff peaks form.
In a separate bowl, beat yolks until thick and pale. Melt the butter and add to yolks with milk. Add all other ingredients except egg whites. If needed, add more coconut milk to make batter thin, but not runny. Batter should be a Betty Crocker cake batter consistency. Scoop egg whites into batter and fold in with a spatula. Cook waffles 2-3 min. Add fresh fruit if desired.
