banana oat muffins

Ingredients
1 banana1 egg1/2 cup soy milk (ShopRite brand)1/2 cup Hollywood brand safflower oil1 1/2 cups whole spelt flour1 1/2 cups rolled oats1 tsp baking powder1/4 tsp. salt1/2 cup blueberries
Directions
Cut banana into chunks, puree in food processor. Add egg, soy milk and oil, process until smooth. Fold in dry ingredients by hand. Add blueberries and stir in.Drop by spoonfuls into a 12 cupcake baking pan, trying to divide the batter as evenly as possible into 12.
