Spinach/Red Pepper Frittata

Ingredients
10 large eggs1Cup Shredded Mozzerella1 large red bell pepper (diced)1Cup chopped spinach4 cloves of garlic.
Directions
Water saute red pepper and garlic until soft. Add spinach and saute until just wilted. In a pie dish melt butter in 350 degree oven. Add vegies and 3/4 of the cheese to pie plate. Pour eggs over the top. Bake in 350 degree oven for 20-25 minutes. Turn oven off and sprinkle last 1/4 of cheese on top and leave in oven just long enough to melt. Cut into 8 pieces and enjoy :-)
