Peanut Butter Balls

Ingredients
1 C. Sugar1 C. Light corn syrup1 1/2 C. Chunky Peanut Butter6 C. Cornflakes1 t. Vanilla extract
Directions
1. In a saucepan bring sugar and white corn syrup to a rolling boil.
2. Remove from heat and stir in peanut butter and stir until melted, stir in vanilla extract.
3. Pour mixture over cornflakes and stir until coated.
4. Roll into balls the size of a quarter.
Hints: I scoop the mixture out into mounds first then go back and roll them, this way they arent so hot. Also, i spray my hands with cooking spray to prevent sticking.

    These taste great. I agree, they are pretty high in calories. I tried them using 1/2 c. sugar, 1/2 c. splenda. They taste great, so next time, I'll use all splenda and no sugar. I also used Bran Flakes, and only 5 cups of it. Mine made 50, at 71 cal. each. (Next time I'll use low fat P.B.) - 4/23/08

    It does sound to be very tasty but must agree it is full of sugar. I will stick with my all natural PB and celery sticks of course with moderation on the PB. - 2/23/08

    I agree with Lilahmoose...you could make it healthier by replacing sugar with splenda and corn flakes with fiber one cereal. Better than cookies or candy bars as a snack. - 1/30/08

    This sounds good for my brothers. They love pb. It is a good snack as a sub for a candy bar. Or families with skinny children, when you make cookies and tend to sample too much.. but at least these have protein. - 1/30/08
