Sunny's Cheesy Spinach and Rice Casserole

2 C white cooked rice1/2 small onion chopped2 cloves garlic crushed and chopped1 sun dried tomato2 c fresh spinach or 1/2 pkg frozen1/2 tbsp basil1/8 tsp oreganosalt dashblack pepper dash1 oz white wine1 tsp olive oil1 lg egg4 oz cheddar jack or colby jack cheese2 oz mozzarella shredded1/2 tbsp parmesan
put oil in pan and saute onions till soft and transparent add pepper, tomato, basil, oregano stir and add spinach turn a few times, add wine salt and pepper mix well and set aside. Beat one egg with 1 tbsp of water and add the cheddar jack and half the mozzarella. In a big bowl put rice add the egg and cheese mixture and the cooked spinach mixture mix well and put in sprayed casserole dish, pat down add remaining mozzarella and Parmesan and bake at 350 for 20 to 30 minutes until bubbly.
