Sweet potato, spinach, and chickpea curry

2 large sweet potatoes2 cups chickpeas (or about 1 can)1 can tomatoes 1 bag or a couple large handfuls of fresh spinach1-2 tsp curry powdersalt to taste (optional)
Bake or microwave sweet potatoes in skins until still slightly firm. Let cool. Peel and cube.
Combine chickpeas and tomatoes ina large saucepan and bring to a simmer over medium heat. Add spinach and cover; cook until it wilts. Stir in potatoes, curry, and salt to taste.
Serving Size: Makes 4 servings.
