Ingredients:Tesco Chicken Thigh Fillets, 486 gram(s)Odlums Cream Plain Flour, 75 gram(s) (or more if needed)Sesame Seeds, 4 tbsEgg, fresh, 1 largePepper, black, 1 tspCumin seed, 2 tsp (roasted)Paprika, 1 tspGround tumeric, 0.5 tspSea Salt, 1 tspPepper, white, 0.5 tsp
Beat the egg and place in a shallow dish, heat a frying pan (mediumk heat) and lightly roast the cumin seeds (until you can smell the spice and they are slightly darker brown), grind the cumin with the sea salt, black pepper, white pepper tumeric and paprika in a pestle and mortar.
Mix the spice mix and the sesame seeds with the flour. Dip the chicken thigh in the egg and then coat in the flour shaking off any excess. Place on a baking sheet and bake in an oven at 170 for 30 mins (sometimes less, when the chicken is browned its done).
