Strawberry and Blueberry Quinoa Salad

Ingredients
1.5 cup cooked quinoa1/2 medium red onion, diced12 large strawberries, diced50 blueberries3 medium stalks of celery, diced20 red lettuce leaves, chopped 2 cups spinach, chopped1 cup chopped carrot4 tbsp balsamic vinegar1 tbsp light blue agave syrup
Directions
1. In a measuring cup, combine light agave syrup and balsamic vinegar.

2. Combine diced onion, strawberries, blueberries, and quinoa in a bowl.

3. Add balsamic vinegar mixture to the bowl.

4. Chill for about an hour so that the mixture can be soaked up a little.

5. Combine red leaf lettuce, spinach, carrots and diced celery and divide into 4 servings.

6. Spoon quinoa mixture onto salads and enjoy!
