Baked Blueberry & Peach Oatmeal

6 cups old-fashioned oats1 cup packed brown sugar4 teaspoons baking powder1 teaspoon salt4 egg whites2 cups skim milk1/2 cup unsweetened applesauce2 teaspoon vanilla extract2 cans (15 oz) sliced peaches in water, drained and chopped1 cup fresh or frozen blueberries
1. Preheat the oven to 350
2. Combine oats, brown sugar, baking powder and salt in a large bowl. In a separate bowl, whisk together the egg whites, applesauce, milk and vanilla. Add egg mixture to dry ingredients and stir until blended together. Let mixture stand for 5 minutes and then add the blueberries and peaches.
3. Spray an 9” x 13” baking dish with cooking spray and pour the oatmeal mixture into the dish, spreading it evenly. Bake uncovered at 350 for 35-40 minutes.
