Mashed Potato Pancakes

Ingredients
2 cups mashed potatoes 1 large egg, beaten lightly 6 tablespoons all-purpose flour 11/2 tablespoons grated onion 2 tablespoons chives 2 oz. shredded cheese (I use Colby Jack)Salt and pepper Cooking spray
Directions
Preheat oven to 250 degrees F.
In a bowl combine well the potatoes and the egg, stir in the flour thoroughly, and stir in the cheese, onion, chives, and salt and pepper, to taste.
In a large heavy skillet, spray cooking spray and heat skillet over moderately high heat until it is hot but not smoking. Fry heaping tablespoons of the potato mixture, flattening them slightly with the back of the spoon, for 1 minute on each side, or until they are golden brown. Keep them warm on a rack set on a baking sheet in a preheated 250 degree F oven. Serve the pancakes as an accompaniment to meat, poultry, or eggs.

    Help. They kept falling apart and sticking to the bottom of the skillet, so I sprayed a 9x13 pan with cooking spray and baked them in the oven. They tasted great, but the kids really wanted potato pancakes. Any tips on how to cook them in a skillet without sticking & falling apart? - 10/4/10

    Very good for left over mashed potatoes. I noticed, however, that cheese is listed as an ingredient. It was not added into the mixture section. Was that a mistake? I did not add cheese to mine. - 9/5/09
