Diet Digest - Almond-Parmesan Cauliflower Au Gratin

1 bag (16 oz frozen cauliflower florets, thawed)Freshly ground black pepperfine sea salt2 Tblsp almond meal or flaxseed meal2 tbslp grated parmesan cheese1/4 tsp paprika (smoked, hot or sweet)Lemon wedges, for serving, optionalOlive oil cooking spray
Preheat oven to 400. Lightly spray 7x11 in baking dish with olive oil.
Arrange cauliflower in the baking dish in a single layer. Spray very lightly with olive oil. Sprinkle a few good grinds of black pepper and a generous pinch of salt. Roast for 10 minutes (to heat up the cauliflower).
Meanwhile, in a small bowl, stir together the almond or flaxseed meal, paremesan and paprika.
Remove the cauliflower from the oven and sprinkle with the parmesan mixture. return to the oven and bake until lightly browned on the top 10-12 minutes.
Serve with lemon wedges for squeezing over cauliflower if desired.
