Zucchini Bites

Ingredients
2 large egg whites (1/2 C)2 cups grated zucchini1/2 cup onion, chopped fine1/2 cup panko breadcrumbs1/2 cup chopped parsley1/2 tsp. kosher salt1/4 tsp. black pepper
Directions
Pre-heat oven to 400 degrees. Coat mini muffin pan with oil spray.
In a large bowl, add all ingredients and mix well. The batter is sticky and loose.
Fill muffin cups to the top using about 1 tablespoon of mixture per cup.
Bake for 15-18 minutes, or until tops are lightly browned.
Serve warm!
