2 fennel bulbs1 chopped tomato or 1 cup halved cherry tomatoes1 leek, white and light green only, halved and chopped1.5 cups chickpeas (or 1 can, rinsed)1/2 cup water1 tbsp. EVOO
Put EVOO in oven safe pan. Add fennel and cook for about 5 mins. Add other ingredients, water, and paprika, salt and cumin. Cook for another 3-5 mins. Put in 425 oven for about 25 mins. (until fennel is soft) Add salt and pepper to taste.
Serving Size: makes 8 pieces of fennel plus 1/4 cup beans
