Chicken Veggie Stew

Ingredients
1 T. olive oil1 c. carrots, sliced1 c. celery, sliced1 c. onion, chopped4 cloves garlic, minced2 c. eggplant, cubed1 c. mushrooms, sliced1 lb. chicken breast, cut in to strips1 (14.5 oz.) can diced tomatoes2 T. dried oregano2 T. dried basil1 (14.5 oz) can black beans
Directions
Saute carrots, celery, onion and garlic in olive oil until transparent. Stir in eggplant and mushrooms. Add in chicken breast strips and cook until opaque. Add in tomatoes, black beans and spices cook 15-20 minutes until flavors are blended. Serve with 2 tsp. low fat parmesan cheese.
